we had fun yesterday. morning started with an instructor training on using assistants, creating demo cards, pacing and sequencing. what i basically translate as time and resources management. the nice thing about it is that it is so elementary that almost anyone call follow the steps and become successful in being an instructor. i think it must be the american style to make it as easy as ABC, or shall i say, state the obvious and make it so clear that it's idiot proof? perhaps thats how they have such a successful series of "how-to" guides, "dummies guide to..." not that i am suggesting that this segment is easy at all.... i think its just the affinity to such methodical ways of doing things step by step. some like it some don't!
this was followed by recipe development directions. the directive for the day is to create an appetizer and a dessert using a list of available ingredients and our own recipe. teams convene to decide on what we want to do for our projects. we have to do 40 tasting portions to allow everyone to have a taste of it and comment.
each team comprise of 4 people and we have to issue out four index card of recipes and martine will come around to blind pick one. obviously i didn't have a recipe to include in the list. of course there are many nice yummy appetizers i can think of doing but won't have a clue where to start! for starters, i love creme brulee and i dont think that'll work in a raw vegan recipe!
so we settled on Day's recipe, which turned out brilliant. we named out recipe "rainbow cashew avocado". the recipe calls for a half avocado and red&yellow bell peppers (what we call capsicum) finely sliced into cubes. the magic to the whole recipe is the sauce which is just amazing.
it helps that we have a wonderful creative and talented team! giselle is just amazing in plating and making everything look extra yummy. day is great in balancing flavours and coming up with ideas on how to salvage a flavour, and penny is just so steady and calm and cool! our final product presentation was photographed, i guess to add to the school's collection of success stories. it's really very interesting to walk around and look at everyone else's creation. everyone take so much pride in their creations and the wonderful stuff that comes out of each team effort is just amazing.

jill, rhoni and stas.. and their "pizza pate on tomato halves". jill is megan's mum. i think it is so wonderful that she gives her daugther the opportunity to explore raw food, and what better opportunity for mother daughter bonding! what a gift for life. i think every mum should do that with their daughters! it really is so cool..
