we started a series of new classes yesterday. this is the main event, the "Associate Chef and Instructor" training series. so we had a few new additions to our class (what cherie calls "addition to the family" - makes me cringe, this lovey dovey talk!) one lady came from australia! i thought i was far enough..
anyway, class started with cherie introducing us to Jennifer Cornbleet, an accomplished raw food chef and instructor. she was trained at living light.
lesson started with a session on writing an introduction. we're supposed to learn to write an intro about ourselves, i suppose so if you need to market yourself as a chef, you need to know. the sample intro was of course cherie's and jennifer's with a string of accomplishments in the raw food world, revolutionary, books, pioneer, etc..... i think mine is kind of sad.... little or no experience in cooking never mind raw food but love to eat, not even a vegan! haha.....
morning session was led by jennifer, we made "not-tuna",seaflower snacks and creative crudites. the not-tuna pate is supposed to replicate the tuna in a tuna sandwiche. it turned out surprisingly good really. the seaweed gives it the fishy taste and we used the champion juicer (http://www.championjuicer.com/models.html) to grind up the nuts to a smooth paste. i like the champion juicer, it can be used to make ice cream too!
we also made snacks out of seaweed and pate. its great for a savoury snack around the house or when you want to pick on something, great for picnics or just as a snack! better than the junk food you could pick on.
so back to our hands on stations, hard at work... (notice how everyone stop to pose for my camera coz they know i'll be blogging it, haha!)
and the results of our jands-on ..... quite a creative bunch we have here!
this was my lunch, yes it's really good....
i have to go for class now, i'll update our vietnamese experience with Matt, our instructor later... and the asian wild rice with martine...
